In a food processor or high-speed blender, combine the chickpeas, tahini, garlic, lime juice, vinegar, basil, parsley, cilantro, oil and salt.
Blend until smooth and creamy, scraping down the sides as needed.
Add cold water one tablespoon at a time until the dip reaches your desired consistency.
Taste and adjust salt if necessary.
For the best flavor, chill for 15 minutes to let the herbs infuse (but it’s also delicious straight from the blender!).
Optionally garnish with lime zest and chopped green onions before serving.
